extra-special zucchini bread
If you have any extra zucchini, this is a great way to use it. One of my baking co-worker's brought shared this bread with me. The secret ingredients is the cream cheese, which makes it very moist! Hope you enjoy it!

Ingredients
- 2 - eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 8 ounces cream cheese, softened
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1/2 teaspoon nutmeg
- 2 cups walnuts, chopped
- 2 cups zucchini, shredded
How To Make extra-special zucchini bread

Step 1350 degree oven; grease and flour two 9 x 5" loaf pans. In bowl, beat eggs, sugar, oil and vanilla until smooth; about three minutes. Beat in the cream cheese.In another bowl, whisk flour, baking soda, baking powder, cinnamon, salt and nutmeg. On low speed, gradually beat into the egg mixture.

Step 2Fold in walnuts and zucchini. Evenly divide batter between the two prepared pans. Bake at 350 degrees for 60 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool in pan for 10 minutes on a wire rack. Turn out of pans and allow to cool completely.
