Eggnog Quick Bread

Do you love Eggnog?
Well, you will enjoy this quick bread. It is really hard to eat just one slice. This bread has a beautiful golden color to it just like eggnog. The glaze makes it even tastier. This bread would be a great addition to any holiday Christmas festivities or for breakfast with a nice hot cup of coffee.
Even though my mother and sister don't like to drink eggnog they really enjoyed this bread. Also, my nephew Noah (who is a picky eater) really liked it too.

dairy eggnog
1/2 c
butter, melted
2 tsp
rum extract
1 tsp
vanilla extract
2 1/4 c
all-purpose flour
2 tsp
baking powder
1/4 tsp


3/4 c
confectioners' sugar (sift your sugar to assure no lumps)
enough eggnog to make a glaze...pour a little at a time into sugar


1Beat eggs, in a large bowl, then add next 5 ingredients, blending well. Add remaining ingredients and stir until just moist. Pour into a greased 9" X 5" loaf pan and bake at 350 degrees for 45 to 50 minutes. Makes one loaf.
2Eggnog glaze:
3/4 cup confectionery sugar
enough eggnog to make it a glaze
Stir together and drizzle on bread.
3Last night, I made a double batch of this recipe and used it for mini bundt cakes and mini loaves. It made 14 of them and they baked about 20 - 25 minutes.
