I make this for family and friends and this is a hit for all those soda bread lovers. Each St Paddy's day, I have to post this recipe online and email all!

Ingredients

  • 3 1/2 cups buttermilk pancake mix
  • 1/2 cup table sugar
  • 1 pint sour cream
  • 2 - large eggs
  • 1 cup golden raisins, or currants, or dried cranberries
  • 3 tablespoons extra sugar for topping

How To Make easy irish soda bread

  • Step 1
    COMBINE THE DRY INGREDIENTS (SUGAR AND PC MIX).
  • Step 2
    STIR THE SOUR CREAM AND EGGS TOGETHER IN A SEPARATE BOWL.
  • Step 3
    FOLD THE EGG MIX INTO THE PANCAKE MIX AND ADD RAISINS.
  • Step 4
    MIX UNTIL JUST COMBINED.
  • Step 5
    SHAPE INTO A LARGE LOAF OR USE A SPRINGFORM PAN WITH BAKING SPRAY.
  • Step 6
    TOP WITH 3 TBLS OF SUGAR
  • Step 7
    BAKE AT 350 DEGREES FOR 1 HOUR OR UNTIL DONE.
