Ingredients
- 3 1/2 cups buttermilk pancake mix
- 1/2 cup table sugar
- 1 pint sour cream
- 2 - large eggs
- 1 cup golden raisins, or currants, or dried cranberries
- 3 tablespoons extra sugar for topping

Step 1COMBINE THE DRY INGREDIENTS (SUGAR AND PC MIX).

Step 2STIR THE SOUR CREAM AND EGGS TOGETHER IN A SEPARATE BOWL.

Step 3FOLD THE EGG MIX INTO THE PANCAKE MIX AND ADD RAISINS.

Step 4MIX UNTIL JUST COMBINED.

Step 5SHAPE INTO A LARGE LOAF OR USE A SPRINGFORM PAN WITH BAKING SPRAY.

Step 6TOP WITH 3 TBLS OF SUGAR

Step 7BAKE AT 350 DEGREES FOR 1 HOUR OR UNTIL DONE.
