easy banana bread

We we were making desserts to sell at a United Way Fundraiser. This is one of the desserts that we sold. It was extremely popular. I have revised the recipe, so please read my comments below. I used to add a banana nut muffin mix to the recipe, but you really don't need it. It comes out very moist and delicious. I find that beating the eggs well, to make them frothy, and adding the dry ingredients gradually to the mixture makes a very moist banana breat. Enjoy as much as I have.

Ingredients

  • 3 - very ripe bananas, mashed
  • 1 - egg, beaten
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/4 cup shortening
  • - chopped walnuts if desired

How To Make easy banana bread

  • Step 1
    To the mashed bananas, add beaten egg, shortening and then mix together. Add sugar and blend well.
  • Step 2
    Sift together flour, baking soda and salt. Add gradually to banana mixture, beating after each addition.
  • Step 3
    *May add chopped walnuts if desired.*
  • This looked so good coming out the oven I could hardly wait. The bread was wonderfully moist.
    Step 4
    Bake in greased loaf pan at 350 degrees for 1 hour.
