this is one of my favorite breads which i have many this is really sweet and good

Ingredients

  • 2 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 - eggs
  • 1/2 cup light corn syrup
  • 1/3 cup corn oil
  • 1/4 cup rum
  • 1 can (8 oz) crushed pineapple in unswetened juice, undrained
  • 1 cup coconut, flaked

How To Make delicious pina colada bread

  • Step 1
    combine flour, sugar, baking powder, baking soda and salt in a medium bowl.
  • Step 2
    in a large bowl, heat eggs, corn syrup, corn oil and rum until well blended.
  • Step 3
    gradually stir in flour mixture just until moistened.
  • Step 4
    stir in pineapple with juice and coconut. pour into a greased and floured loaf pan 9x5x3 inches.
  • Step 5
    bake 60-65 minute in 350 oven or until a toothpick inserted in the center comes out clean.
  • Step 6
    remove from oven and leave in pan for 10 minutes to cool and then move to wire rack to cool completely.
