date and nut bread

One of my dearest friends always makes this at Christmas to give as gifts for her neighbors and friends. Everyone looks forward to this.

yield makes 4 small loaves or 3 larger loaves

Ingredients

  • - 1 1/2 lbs. dates
  • - 1 1/2 tsp. baking soda
  • - 3/4 cup butter or margarine
  • - 3 cups sugar
  • - 3 eggs
  • - dash salt
  • - 1 1/2 chopped nuts
  • - 1 1/2 tsp. vanilla
  • - 3 cups flour

How To Make date and nut bread

  • Step 1
    Cut up dates in a bowl, cover with 1 1/2 cups hot water (from the tap) and baking soda. Set aside.
  • Step 2
    In another bowl, cream butter and sugar. Add eggs and mix well. Add salt, nuts and vanilla and mix well. Add dates and liquid. Then add flour and mix well.
  • Step 3
    Bake in greased and floured loaf pans in 350 degree oven. Bake for 40 to 55 minutes or until toothpick comes out clean.
  • Step 4
    Cool 20 to 25 minutes. Freezes well.
