This recipe is full of zesty cranberries with the essence of orange. The flavors compliment each other very well. Perfect for the holidays, or anytime! NOTE: This recipe makes ONE 9 x 5 inch loaf. I doubled the recipe, which is why you see two loaves in one of the images.

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon grated orange zest
  • 1 1/2 cups fresh cranberries
  • 1/4 cup butter
  • 1 cup sugar
  • 1 large egg
  • 3/4 cup orange juice
  • 1/2 teaspoon vanilla

How To Make cranberry orange loaf

  • Step 1
    Preheat oven to 350 degrees. Spray a 9 x 5 inch loaf pan. Whisk together flour, baking powder, baking soda and salt. Stir in orange zest and cranberries.
  • Step 2
    In a large bowl, cream together butter, sugar, egg and vanilla until smooth. Stir in orange juice. Beat in flour mixture until just moistened. Pour into prepared pan.
  • Step 3
    Bake for 1 hour or until bread springs back when lightly touched and top is golden brown. Let cool for 10 minutes, then turn out onto a wire rack to cool. Wrap in plastic when completely cool. Freezes well!
