This is very moist bread. I love to make it when I can find fresh cranberries around Thanksgiving, but it is good anytime if you have some frozen.

Ingredients

  • 3/4 cup orange juice
  • 1/2 cup mayonnaise
  • 2 eggs, lightly beaten
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup + 2 Tbsp granulated sugar, divided
  • 1/2 cup pecans, chopped
  • 3 teaspoons orange zest, divided
  • 1 1/2 cups fresh cranberries

How To Make cranberry nut bread

  • Step 1
    Combine the orange juice, mayonnaise, and eggs in a small bowl. Stir well.
  • Step 2
    Combine flour, baking powder, baking soda, salt, 1 c granulated sugar, chopped pecans, and 2 tsp orange zest in a large bowl; stir well. Add the orange juice mixture to the flour mixture, stirring until blended. Gently fold in the cranberries.
  • Step 3
    Pour the batter into a greased and floured 9 x 5 x 3 inch loaf pan.
  • Step 4
    Combine 2 tablespoons sugar and 1 teaspoon orange zest; sprinkle evenly over the batter. Bake at 350 degrees F for 1 hour or 1 hour and 10 minutes or until a wooden pick inserted in the center comes out clean.
  • Step 5
    Let the bread cool in the pan for 10 minutes before removing from the pan. Remove the bread from the pan and continue to let it cool on a wire rack.
