cran-orange chip bread

I love to make quick breads-especially during the holidays! I found this gem while trying to use up some fresh cranberries I had bought...This recipe is one of the few I found that called for fresh/frozen berries instead of dried, and the results are delish! :) By the way, don't let the long ingredients list put you off-it's quick, easy, and your family will thank you ;)

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 - eggs
  • 3/4 cup vegetable oil
  • 2 teaspoons grated orange peel
  • 1 cup buttermilk
  • 1 1/2 cups fresh or frozen chopped cranberries
  • 1 cup vanilla or white chocolate chips
  • 1 cup chopped walnuts

How To Make cran-orange chip bread

  • Step 1
    In a bowl, combine the first 5 ingredients. In another small bowl, combine eggs, oil, and orange peel; mix well. Add this to the dry ingredients alternately with the buttermilk.
  • Step 2
    Fold in cranberries, white chocolate chips, and walnuts into mixture.
  • Step 3
    Pour into 2 greased 8-in.X 4-in. loaf pans. Bake at 350 degrees for 50-60 min. or until a toothpick inserted at the center comes out clean. Cool for 10 min. before removing from pans to wire rack.
