I found this recipe tucked in my Amy Vanderbilt's Cookbook. This one was copyrighted in 1961. The recipe is on a newspaper without a date. The note on top of the recipe says: tis' Country Cork Soda Bread....with love and a cross to keep the devil out! Happy St. Patrick's Day . I am going to make it for St. Patrick's Day, I have not tried this recipe yet but looks wonderful and easy to make.

Ingredients

  • 4 cups flour or use 3 cups of flour and 1 cup of wheat germ
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup raisins
  • 1 tablespoon caraway seeds
  • 1 3/4 cups buttermilk
  • 1/4 cup oil

How To Make country cork soda bread

  • Step 1
    Mix together flour, wheat germ, baking powder, soda, salt, raisins, and caraway seeds. Add buttermilk and oil. Stir just enough to moisten dry ingredients. Shape dough into 2 mounds on a greased baking sheet. Cut deep crosses in the top(to keep the devil out). Bake in 350 degree oven for 50 minutes. Makes 2 loaves.
