Ingredients

  • 1 cup yellow corn meal
  • 1 cup all purpose flour
  • 1 TBSP + ½ teaspoons baking powder
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1 teaspoon salt
  • 1/3 cup butter, melted and cooled
  • 1 large egg
  • 1 cup whole milk
  • 1 teaspoon honey
  • 1 teaspoon water

How To Make corn bread

  • Step 1
    In a large mixing bowl, whisk together the dry ingredients, you may need to break up any clumps of brown sugar with your fingers.
  • Step 2
    In a 4 cup measuring cup or medium bowl whisk the milk, egg and butter until smooth.
  • Step 3
    Add the wet ingredients from the measuring cup or medium bowl to the dry ingredients and stir 3 or 4 times just to get the liquid mixed in. Allow to rest 10-15 minutes.
  • Step 4
    Preheat oven to 400°F, for an 8 or 9 inch cast iron skillet or metal cake pan season with a dab of butter and allow it to heat in the oven. If using a glass baking dish, spray with non stick spray and set aside.
  • Step 5
    In a small bowl, mix the honey and water until evenly incorporated and set aside.
  • Step 6
    After the mixture has rested mix once then transfer to the baking vessel of choice, carefully if using a hot pan.
  • Step 7
    Spread mixture evenly and use a basting brush or drizzle the honey mixture over the top, not enough to saturate just enough to evenly coat it.
  • Step 8
    Bake for about 20 minutes or until the top is a rich golden brown. Allow to cool for about 5 minutes before slicing.
