Ingredients

  • 3 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 4 - eggs
  • 1 cup oil
  • 1 cup buttermilk
  • 1 cup nuts/chopped (your favorite)
  • 1 cup coconut/shredded
  • 2 cups sugar
  • 2 teaspoons coconut extract

How To Make coconut bread

  • Step 1
    Sift together: the flour, salt, baking soda & baking powder. Mix together: eggs, oil, sugar and coconut extract.
  • Step 2
    Add dry ingredients to wet mixture, alternating with the Buttermilk. Add the shredded coconut, and nuts.
  • Step 3
    Pour batter into 2 large greased loaf pans. Bake @ 350 degrees for 1 1/4 hrs. Immediately after removing from the oven, loosen sides with a dull knife & remove from pan. Pour the glaze over the top & sides.
  • Step 4
    GLAZE: 1 cup sugar, 1/2 cup water, 1 tblsp. Butter Boil: 5 min.; remove from heat & stir in 1 tsp. Coconut Extract.
