Ingredients
- 3 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 4 - eggs
- 1 cup oil
- 1 cup buttermilk
- 1 cup nuts/chopped (your favorite)
- 1 cup coconut/shredded
- 2 cups sugar
- 2 teaspoons coconut extract
How To Make coconut bread

Step 1Sift together: the flour, salt, baking soda & baking powder. Mix together: eggs, oil, sugar and coconut extract.

Step 2Add dry ingredients to wet mixture, alternating with the Buttermilk. Add the shredded coconut, and nuts.

Step 3Pour batter into 2 large greased loaf pans. Bake @ 350 degrees for 1 1/4 hrs. Immediately after removing from the oven, loosen sides with a dull knife & remove from pan. Pour the glaze over the top & sides.

Step 4GLAZE: 1 cup sugar, 1/2 cup water, 1 tblsp. Butter Boil: 5 min.; remove from heat & stir in 1 tsp. Coconut Extract.
