How to Make Coconut Bread
- Sift together: the flour, salt, baking soda & baking powder.
Mix together: eggs, oil, sugar and coconut extract.
- Add dry ingredients to wet mixture, alternating with the Buttermilk. Add the shredded coconut, and nuts.
- Pour batter into 2 large greased loaf pans. Bake @ 350 degrees for 1 1/4 hrs. Immediately after removing from the oven, loosen sides with a dull knife & remove from pan. Pour the glaze over the top & sides.
- GLAZE: 1 cup sugar, 1/2 cup water, 1 tblsp. Butter
Boil: 5 min.; remove from heat & stir in 1 tsp.
