all purpose flour
1/2 tsp
1/2 tsp
baking soda
1/2 tsp
baking powder
1 c
1 c
1 c
nuts/chopped (your favorite)
1 c
2 c
2 tsp
coconut extract

How to Make Coconut Bread


  • 1Sift together: the flour, salt, baking soda & baking powder.

    Mix together: eggs, oil, sugar and coconut extract.
  • 2Add dry ingredients to wet mixture, alternating with the Buttermilk. Add the shredded coconut, and nuts.
  • 3Pour batter into 2 large greased loaf pans. Bake @ 350 degrees for 1 1/4 hrs. Immediately after removing from the oven, loosen sides with a dull knife & remove from pan. Pour the glaze over the top & sides.
  • 4GLAZE: 1 cup sugar, 1/2 cup water, 1 tblsp. Butter

    Boil: 5 min.; remove from heat & stir in 1 tsp.
    Coconut Extract.
