Ingredients
- 1 cup butter, softened
- 1 1/2 cups sugar
- 3 eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract or coconut extract
- 1 1/2 cups flour
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup unsweetened coconut milk
- 1 cup shredded coconut
- COCONUT GLAZE
- 1 cup powdered sugar
- 1/3 cup unsweetened coconut milk
- 1 teaspoon vanilla extract
How To Make coconut bread

Step 1Preheat oven to 350 degrees.

Step 2In a stand mixer beat butter and sugar for about 3 minutes. While butter and sugar are beating, Combine flour, baking powder and salt in a bowl and stir with a fork.

Step 3Add in one egg at a time beating until just incorporated. Next beat in extracts.

Step 4Turn mixer to low and gradually add flour mixture and coconut milk until combined. Scraping bottom and sides of the bowl.Add shredded coconut to batter and give it one more mix.

Step 5Grease loaf pan with non stick cooking spray. Pour batter in pan and spread evenly and bake about 1 hour to 1 1/2 hours.

Step 6Coconut Glaze: In small bowl combine powdered sugar coconut milk and vanilla extract and whisk using a fork until combined. Pour over bread once it is cooled for 10-15 minutes. Pour glaze over bread and top with shredded coconut.
