Ingredients

1 1/2 c
flour
3/4 c
sugar
1 1/2 tsp
baking powder
1/2 tsp
baking soda
1/4 tsp
salt
1 tsp
cinnamon
1/2 tsp
nutmeg
1/4 tsp
ground ginger
1/4 tsp
ground cloves
1/4 c
oil
1 c
pumpkin puree
2
eggs
1 tsp
vanilla extract

STREUSEL TOPPING:

1/2 c
flour
1/2 c
sugar
1 tsp
cinnamon
1/4 c
butter, cold and cut into 1/2 inch pieces

How to Make Cinnamon Streusel Pumpkin Bread

Step-by-Step

  • 1Preheat oven to 350.
  • 2In a medium bowl stir together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger and cloves until well blended.
  • 3In another bowl beat the eggs with the sugar, oil and pumpkin until smooth.
  • 4Pour in the flour mixture and beat until smooth.
  • 5Spray 3 mini loaf pans with cooking spray and evenly distribute the dough between them.
  • 6For the streusel topping mix the flour, sugar and cinnamon with a fork.
  • 7Add the butter and using a fork, pastry blender or your fingers crumble the butter into the sugar mixture until you have a crumbly looking mixture.
  • 8Pour evenly over the 3 pans of pumpkin bread dough and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  • 9Allow to cool in pans for a few minutes then remove to a cooling rack. Serve warm or at room temperature.
