This is a wonderful, yet easy quick Cinnamon bread. It is great to use when making french toast. Very moist and tasty... Enjoy! My photos

Ingredients

  • 2 cups all-purpose flour (unbleached)
  • 1 cup white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 2 - eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup pecans, chopped ( optional )
  • TOPPING / I DOUBLE THIS
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 2 teaspoons butter, softened
  • 1/4 cup chopped pecans ( optional )

How To Make cinnamon swirl bread - so easy

  • Step 1
    Preheat oven to 350 degrees F. Grease one 9x5 inch loaf pan.
  • Step 2
    In large mixing bowl add the first 10 ingredients, beat 3 minutes.
  • Step 3
    Pour into prepared loaf pan. Smooth top.
  • Step 4
    Combine 3 tablespoons white sugar, 1/2 teaspoon cinnamon and butter, mixing until crumbly.
  • Step 5
    Sprinkle topping over smoothed batter. Using knife, cut in a light swirling motion to give a marbled effect. (sprinkle top with 1/4 cup pecans.) I usually double the cinnamon mixture.
  • Step 6
    Bake for about 50 minutes. Test with toothpick. When inserted it should come out clean. Remove bread from pan to rack to cool.
  • Step 7
    You can glaze with a simple confectioners' sugar, cream and vanilla mixture. I don't always... It's also great with the addition of plumped up raisins.
