- - 4 tablespoons canola oil
- - 1 cup plus 2 tbsp. water
- - 1/2 cup chopped walnuts

Step 1In a large bowl, sift together flour, sugar, baking soda, salt, cinnamon, ground ginger, and nutmeg. In a blender, combine banana puree, vanilla, canola oil, water, and blend well. Whisk liquid mixture into the dry ingredients and combine thoroughly. Pour batter into greased 9" x 13" pan and sprinkle chopped walnuts over the top. Bake at 350 degrees F for 20 to 25 minutes or until a toothpick comes out clean. Allow to cool before cutting.
