Ingredients

2 c
brown sugar, firmly packed
2 c
pumpkin puree
2
large eggs
1 c
canola oil
1 c
apple cider
4 1/2 c
ap flour
2 Tbsp
baking powder
1 Tbsp
cinnamon, ground
1 c
raisins
1 c
walnut pieces

Step-By-Step

1combine first 5 ingredients with a whisk until well blended.
2whisk together dry ingredients in a seperate bowl.
3Add dry to wet and mix until moistened. Do not overmix!
4Stir in raisins and walnuts.
5Pour evenly into 2 greased loaf pans.
6Bake in a preheated 350 degree oven for 50 minutes or until toothpick inserted in center comes out clean.
7Cool, remove from pan, slice and enjoy. It's nice to keep one and gift the other!
