Ingredients

  • 2 cups brown sugar, firmly packed
  • 2 cups pumpkin puree
  • 2 - large eggs
  • 1 cup canola oil
  • 1 cup apple cider
  • 4 1/2 cups ap flour
  • 2 tablespoons baking powder
  • 1 tablespoon cinnamon, ground
  • 1 cup raisins
  • 1 cup walnut pieces

How To Make cider pumpkin bread

  • Step 1
    combine first 5 ingredients with a whisk until well blended.
  • Step 2
    whisk together dry ingredients in a seperate bowl.
  • Step 3
    Add dry to wet and mix until moistened. Do not overmix!
  • Step 4
    Stir in raisins and walnuts.
  • Step 5
    Pour evenly into 2 greased loaf pans.
  • Step 6
    Bake in a preheated 350 degree oven for 50 minutes or until toothpick inserted in center comes out clean.
  • Step 7
    Cool, remove from pan, slice and enjoy. It's nice to keep one and gift the other!
