  • 2 c
    brown sugar, firmly packed
  • 2 c
    pumpkin puree
  • 2
    large eggs
  • 1 c
    canola oil
  • 1 c
    apple cider
  • 4 1/2 c
    ap flour
  • 2 Tbsp
    baking powder
  • 1 Tbsp
    cinnamon, ground
  • 1 c
  • 1 c
    walnut pieces

How to Make Cider Pumpkin Bread


  1. combine first 5 ingredients with a whisk until well blended.
  2. whisk together dry ingredients in a seperate bowl.
  3. Add dry to wet and mix until moistened. Do not overmix!
  4. Stir in raisins and walnuts.
  5. Pour evenly into 2 greased loaf pans.
  6. Bake in a preheated 350 degree oven for 50 minutes or until toothpick inserted in center comes out clean.
  7. Cool, remove from pan, slice and enjoy. It's nice to keep one and gift the other!
