Ingredients
- 2 cups sugar
- 1 cup canola oil
- 2 - eggs, beaten
- 1 teaspoon vanilla
- 2 3/4 cups flour
- 2 tablespoons cocoa powder
- 2 tablespoons special dark cocoa powder
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups grated zucchini, peeled
- 1 cup mini chocolate chips
- 1 cup chopped nuts, optional
- 1 cup coconut (optional)
How To Make chocolate zucchini bread

Step 1Blend sugar, oil, eggs and vanilla. Stir in zucchini.

Step 2Combine flour, cocoas, baking powder, baking soda, and salt. Add to egg mixture, blending well.

Step 3Stir in chocolate chips and nuts and coconut, if you are using them.

Step 4Pour batter into 2 greased and floured 9x5 loaf pans.

Step 5Bake at 325° for 1 hour or until toothpick comes out clean.

Step 6Cool in pan for 10 minutes and then remove to a wire rack to cool entirely.
