This is how I used the first zucchini from the garden!

Ingredients

  • 2 cups sugar
  • 1 cup canola oil
  • 2 - eggs, beaten
  • 1 teaspoon vanilla
  • 2 3/4 cups flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons special dark cocoa powder
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups grated zucchini, peeled
  • 1 cup mini chocolate chips
  • 1 cup chopped nuts, optional
  • 1 cup coconut (optional)

How To Make chocolate zucchini bread

  • Step 1
    Blend sugar, oil, eggs and vanilla. Stir in zucchini.
  • Step 2
    Combine flour, cocoas, baking powder, baking soda, and salt. Add to egg mixture, blending well.
  • Step 3
    Stir in chocolate chips and nuts and coconut, if you are using them.
  • Step 4
    Pour batter into 2 greased and floured 9x5 loaf pans.
  • Step 5
    Bake at 325° for 1 hour or until toothpick comes out clean.
  • Step 6
    Cool in pan for 10 minutes and then remove to a wire rack to cool entirely.
