chocolate chip pumpkin bread

I know this sounds like a crazy combination. But it is so good and moist. My father in law loves it. He is quite disappointed if I show up at his house without one in hand. I always make several and send home with those attending our Thanksgiving dinner.

Ingredients

  • 4 large eggs
  • 2/3 cup water
  • 1 cup vegetable oil (do not use any other oil)
  • 1 can 15-16 oz. pumpkin
  • 3 cups granulated sugar
  • 3-1/3 cup flour
  • 2 teaspoons baking soda
  • 1-1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 cup chocolate chips or mini chocolate chips

How To Make chocolate chip pumpkin bread

  • Step 1
    Combine in large mixing bowl the eggs, water, vegetable oil, pumpkin and the sugar. Set aside.
  • Step 2
    Combine dry ingredients in a separate bowl. Add by cupful(s) to the wet ingredients. Add the chocolate chips last. Pour into greased loaf pans and bake at 350 degrees for 45-55 minutes.
  • Step 3

    Bake at 350 degrees for 45-55 minutes or until toothpick tests done in the center.

    Cool in pan on wire rack for an hour before turning out of pan. Freezes well. Double batches work well.
