Ingredients

2 medium
eggs
3/4 c
granulated sugar
1/3 c
vegetable oil
1/3 c
lemon juice
1/4 c
water
2 c
all purpose flour
2 tsp
baking powder
1 tsp
ground cinnamon
1/2 tsp
baking soda
1/4 tsp
salt
2/3 c
shredded unpeeled zucchini
2/3 c
dried tart cherries
1 Tbsp
grated lemon peel

How to Make Cherry Zucchini Bread

Step-by-Step

  • 1put eggs in large mixing bowl. beat with electric mixer on medium speed 3-4 minutes or until eggs are thick and lemon colored. add sugar, oil, lemon juice and water, mix well.
  • 2combine flour, baking powder, cinnamon, baking soda and salt. add flour mixture to egg mixture, mix well.
  • 3stir in zucchini, cherries and lemon peel. grease and flour bottom of 81/2x41/2 inch loaf pan. pour batter into prepared pan.
  • 4bake in preheated 350 oven 55-65 minutes or until a toothpick inserted in center comes out clean.
  • 5let cool in pan on wire rack 10 minutes. loosen edges with a metal spatula. remove from pan. let cool completely.
  • 6wrap tightly in plastic wrap and store in refrigerator.
