2 medium
3/4 c
granulated sugar
1/3 c
vegetable oil
1/3 c
lemon juice
1/4 c
2 c
all purpose flour
2 tsp
baking powder
1 tsp
ground cinnamon
1/2 tsp
baking soda
1/4 tsp
2/3 c
shredded unpeeled zucchini
2/3 c
dried tart cherries
1 Tbsp
grated lemon peel


1put eggs in large mixing bowl. beat with electric mixer on medium speed 3-4 minutes or until eggs are thick and lemon colored. add sugar, oil, lemon juice and water, mix well.
2combine flour, baking powder, cinnamon, baking soda and salt. add flour mixture to egg mixture, mix well.
3stir in zucchini, cherries and lemon peel. grease and flour bottom of 81/2x41/2 inch loaf pan. pour batter into prepared pan.
4bake in preheated 350 oven 55-65 minutes or until a toothpick inserted in center comes out clean.
5let cool in pan on wire rack 10 minutes. loosen edges with a metal spatula. remove from pan. let cool completely.
6wrap tightly in plastic wrap and store in refrigerator.
