cherry nut bread

I liked serving this when I had my gal friends over for coffee.

Ingredients

  • 2 cups butter, softened
  • 3 cups sugar
  • 5 - eggs. separated
  • 1t teaspoon vanilla extract
  • 5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 cup buttermilk
  • 2 jars 10 ounce..drained and rough chopped..cherries
  • 1 - chopped pecans
  • 2 tablespoons lemon zest, grated
  • 1/2 cup pecans.chopped
  • 1 teaspoon baking soda

How To Make cherry nut bread

  • Step 1
    Preheat oven to 350F..grease and flour four pans that are 8 in x 4 inch x 2 in.
  • Step 2
    In large mixing bowl cream butter and sugar until creamy..add egg yolks, vanilla and lemon zest mix well.. combine baking powder , baking soda and flour add to the butter mix alternately with the buttermilk just til blended..[BATTER WILL BE THICK} in separate bowl beat egg whites til stiff peaks for fold into batter...fold cherries and nuts into batter.
  • Step 3
    Transfer the batter in equal amounts into prepared pans and bake 50 to 55 minutes. or when toothpick inserted in center comes out clean..cool for 10 minutes before removing from pans to rack....these freeze well..wrap in saran and foil to freeze.
  • Step 4
    In the list of ingredients it says 2 jars.. the cherries was left out when making up the list of ingredients..so this is to be added into the list of ingredients.
