3 lgvery ripe bananas, mashed

1/3 cvanilla greek yogurt

1/3 cjif cashew butter

1 tspvanilla

3 Tbspmelted butter

2eggs

1/2 csugar

1/2 cbrown sugar

1 1/2 cwhite wheat flour (you can also use all purpose)

1/2 tspsalt

1 tspbaking soda

1 cbutterscotch chips (reserve about 1/4 cup for top of bread if desired)

1 cshredded coconut

1 cchopped cashews
How To Make cashew butter butterscotch banana bread -

1Preheat oven to 350 degrees F. In a mixing bowl, combine mashed bananas, yogurt, Jif Cashew Butter, vanilla and melted butter. Mix until well combined. Stir in eggs, followed by sugars. Mix until all ingredients are well combined. In a separate bowl combine flour, salt and baking soda. Stir dry into wet ingredients, add in butterscotch chips, coconut and chopped cashews, mixing by hand until combined, but do not over mix.

2Pour into a 9"x5" loaf pan that has been sprayed with non stick cooking spray. If desired sprinkle top of bread with more butterscotch chips. Bake for approximately 70-80 minutes or until knife inserted into center comes out clean. If bread starts to brown more than you like, carefully cover with a sheet of foil after about 50 minutes and leave covered for the remaining baking time.

3Remove from oven and cool for 10-20 minutes before removing from pan to finish cooling on a wire rack. Enjoy!
