carrot prune bread
I found this recipe online and altered it slightly to my taste. You can use raisins or chopped prunes as I have in the image. Great for a quick breakfast or snack. NOTE: I omitted nuts because my kids won't eat them!

Ingredients
- 2 large eggs
- 1 cup sugar
- 2/3 cup vegetable oil
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 1 1/2 cups carrots (finely grated, raw)
- 1 cup walnuts (chopped) if desired
- 3/4 cup chopped dried prunes or raisins

Step 1Preheat oven to 350 degrees. Grease and flour a 9x5 inch loaf pan and set aside.

Step 2Beat eggs and add sugar, oil and vanilla. Sift flour, soda, spices and salt and add to egg mixture. Beat well.

Step 3Add carrots, fruit and nuts (if desired). Pour batter in pan and bake for about one hour or until toothpick inserted in center comes out clean.
