Ingredients For carrot coconut bread

  • nonstick cooking spray
  • flour for dusting
  • 2 cups flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 3 large eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 1 tsp. vanilla extract
  • 2 cups finely shredded carrots
  • 2 cups grated coconut
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 cup sugar
  • 1 tsp. cinnamon

How To Make carrot coconut bread

    Preheat oven to 350. Coat a 5 x 9 inch loaf pan with cooking spray. Dust with flour Sift the 2 cups flour, salt, baking soda, and baking powder in medium bowl; set aside. Whisk the eggs, oil and vanilla in large bowl. Mix in carrots, coconut, raisins and walnuts. Add flour mixture. Add sugar and cinnamon; mix til well combined.

    Spoon batter into loaf pan. Bake for 1 1/4 hours. Remove from pan. Cool on wire rack May be stored, wrapped in refrigerator for several days, which improves the flavor. Makes 1 loaf
