·2 cups flour

·1/2 tsp. salt

·1 tsp. baking soda

·1 tsp. baking powder

·3 large eggs, lightly beaten

·1/2 cup vegetable oil

·1 tsp. vanilla extract

·2 cups finely shredded carrots

·2 cups grated coconut

·1 cup raisins

·1 cup chopped walnuts

·1 cup sugar

·1 tsp. cinnamon
How to Make Carrot Coconut Bread
- Preheat oven to 350. Coat a 5 x 9 inch loaf pan with cooking spray. Dust with flour
Sift the 2 cups flour, salt, baking soda, and baking powder in medium bowl; set aside. Whisk the eggs, oil and vanilla in large bowl. Mix in carrots, coconut, raisins and walnuts. Add flour mixture. Add sugar and cinnamon; mix til well combined. - Spoon batter into loaf pan. Bake for 1 1/4 hours. Remove from pan. Cool on wire rack
May be stored, wrapped in refrigerator for several days, which improves the flavor. Makes 1 loaf
