- - flour for dusting
- - 2 cups flour
- - 1/2 tsp. salt
- - 1 tsp. baking soda
- - 1 tsp. baking powder
- - 3 large eggs, lightly beaten
- - 1/2 cup vegetable oil
- - 1 tsp. vanilla extract
- - 2 cups finely shredded carrots
- - 2 cups grated coconut
- - 1 cup raisins
- - 1 cup chopped walnuts
- - 1 cup sugar
- - 1 tsp. cinnamon

Step 1Preheat oven to 350. Coat a 5 x 9 inch loaf pan with cooking spray. Dust with flour Sift the 2 cups flour, salt, baking soda, and baking powder in medium bowl; set aside. Whisk the eggs, oil and vanilla in large bowl. Mix in carrots, coconut, raisins and walnuts. Add flour mixture. Add sugar and cinnamon; mix til well combined.

Step 2Spoon batter into loaf pan. Bake for 1 1/4 hours. Remove from pan. Cool on wire rack May be stored, wrapped in refrigerator for several days, which improves the flavor. Makes 1 loaf
