Sift the 2 cups flour, salt, baking soda, and baking powder in medium bowl; set aside. Whisk the eggs, oil and vanilla in large bowl. Mix in carrots, coconut, raisins and walnuts. Add flour mixture. Add sugar and cinnamon; mix til well combined.
2Spoon batter into loaf pan. Bake for 1 1/4 hours. Remove from pan. Cool on wire rack
May be stored, wrapped in refrigerator for several days, which improves the flavor. Makes 1 loaf
