Found this recipe among the recipes my Mom had kept over the years. This one is by her mother, Viva Johnson. I haven't tried it yet. If anyone makes it, please share with me how it turned out.

Ingredients
- 1 1/2 cups flour, sifted
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 cup oil
- 1 cup sugar
- 2 - eggs
- 1 cup carrots, grated
- 1/4 cup walnuts, chopped
How To Make carrot bread

Step 1Sift together flour,, baking powder, baking soda, salt and cinnamon

Step 2Combine in separate mixing bowl, oil and sugar

Step 3Mix well. Add eggs one at a time. Beat well after each addition.

Step 4Add dry ingredients to wet mixture beating until smooth

Step 5Add grated carrots and chopped walnuts.

Step 6Blend well and turn into a well-greased loaf pan (9 x 5 x 3)

Step 7Bake in a moderate oven (350 F) for 55-60 minutes. Remove from pan and cool on rack
