My mother used to make this delicious bread every year at Christmas time. She was a fabulous cook. I truly don't remember anything she made turning out badly. Needless to say, I had a great teacher! :)

Ingredients

  • 6 tablespoons shortening
  • 1 cup sugar
  • - zest of one lemon
  • 1 tablespoon baking powder
  • 1 1/2 cups flour
  • 2 - eggs
  • 1/2 teaspoon salt
  • 1/2 cup milk, whole
  • 1/2 cup walnut pieces (optional)
  • GLAZE
  • 1/2 cup sugar
  • - juice of 1 lemon

How To Make canadian lemon bread

  • Step 1
    Cream shortening and sugar together until creamy.
  • Step 2
    Add eggs and milk, mix well.
  • Step 3
    Add salt,baking powder, and flour, mix well.
  • Step 4
    Fold in lemon zest.
  • Step 5
    Pour into greased, 1-quart, bread pan and let rise for 20 minutes.
  • Step 6
    Bake at 350 degrees F for 45 minutes, or until done.
  • Step 7
    When still warm, remove from pan and brush the top and sides with the glaze.
  • Step 8
    The glaze should be made and left to stand while the bread is baking.
