cake mix pumpkin bread
I wanted something quick and easy to make that tasted like pumpkin spice. I found this recipe on the internet and it came together quickly and easily. Definitely hit the mark for pumpkin spice taste.

Ingredients
- 1 box spice cake mix, any brand
- 1 can (15 oz) pumpkin puree (not pumpkin pie mix)
- 1/2-1 cup semi-sweet chocolate chips
- 1/2-1 cup chopped pecans (optional)

Step 1Preheat oven to 350^ and grease (or spray with cooking spray) a 9' x 5" loaf pan.

Step 2In a large bowl, completely mix the box of cake mix and the can of pumpkin, making sure any lumps are broken up and blended in.

Step 3Add 1/2 to 1 cup of semi-sweet chocolate chips and 1/2 to 1 cup chopped pecans (if using); blend well.

Step 4Pour batter into prepared pan (top with additional chocolate chips, if desired) and bake for 50-60 minutes or until it tests done with a toothpick.

Step 5When you remove loaf from oven, allow to sit in pan for around 5 minutes before removing from pan.

Step 6NOTE: I used 1 cup of chocolate chips in the batter. I felt like there were too many. The chocolate flavor overpowered the pumpkin spice flavor. In the future I will only use 1/2 cup. Also, I sprinkled additional chips on top, but this makes it difficult to tip out of the pan without making a big chocolate mess on your counter top.
