Always gets rave reviews! You can also mix it up by using cinnamon chips with the coconut or peanut butter chips and omit the coconut. Very versatile recipe.

Ingredients For butterscotch coconut banana bread

  • 2 stick
    butter, softened
  • 1 c
    sugar
  • 2
    ripe bananas, mashed
  • 2
    eggs, lightly beaten
  • 1/2 c
    sweetened flake coconut (or more to taste)
  • 1/2 c
    butterscotch chips (or more to taste)
  • 2 1/2 c
    self rising flour, sifted
  • 1/3 c
    milk, 2%
  • 1 tsp
    pure vanilla extract

How To Make butterscotch coconut banana bread

  • 1
    Preheat over to 350. Cream Butter and sugar. Add in eggs and mashed bananas. Mix in chips and coconut. Add in sifted flour then milk and vanilla. Pour into greased bread pan (i use butter flavored Pam). Bake for 1 hour and 10 minutes. Check after an hour. Toothpick should come out clean when inserted into the middle.
