butternut squash bread

I have recently been in love with anything squash - at this moment butternut. I thought, it is so sweet and yummy that it should be a dessert. My favorite desserts just happen to be sweet breads - of any variety - so I put this together and my family loved it, so I thought I would share. My husband loves the way the ginger comes through. I hope you enjoy it as well.

Ingredients

  • 1 cup cane sugar
  • 1 1/2 cups brown sugar
  • 2/3 cup butter
  • 1 tablespoon vanilla extract
  • 2 cups cooked, pureed and drained butternut squash
  • 2/3 cup water
  • 4 - eggs
  • 3 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1 cup walnuts or pecans (optional)
  • 1 cup dried cranberries or raisins (optional)

How To Make butternut squash bread

  • Step 1
    Preheat oven to 350 F - 175 C grease and flour 2 - 9 in bread pans
  • Step 2
    Mix together dry ingredients, flour, baking powder, baking soda, salt, ginger, cinnamon with a whisk. Set aside.
  • Step 3
    In a separate bowl, beat sugar and butter together. Add vanilla, eggs, water, and squash. Mix well. Stir in dry ingredients and nuts. Pour into prepared pans and bake for 60 - 75 minutes, until toothpick inserted in the middle comes out clean.
