bran muffins
My favorite brand of bran muffin mix was discontinued so I had to find a recipe I liked. I came up with this, it a mash up of several recipes.

Ingredients
- 1 1/2 cups wheat bran (not cereal like bran flakes)
- 1/2 cup boiling water
- 1/4 cup softened butter
- 2/3 cup packed brown sugar
- 1 egg, lightly beaten
- 1 cup buttermilk
- 1 1/4 cups white flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
How To Make bran muffins

Step 1Preheat oven to 400, grease muffins tins

Step 2Pour hot water over bran, stir well to get it all moist

Step 3Mix together butter and sugar

Step 4Mix salt and baking soda into flour

Step 5Mix all ingredients together, batter will be thick.

Step 6Spoon into muffin tins. Bake 15 to 20 minutes.

Step 7Note: I just discovered molasses powder and tried it today in this recipe. It really adds that certain something. I used 2 T. Got it from Amazon. Totally optional.
