Ingredients

  • FOR THE BREAD:
  • 2 tablespoons unsalted butter
  • 1/4 cup boiling water
  • 1/2 cup freshly squeezed orange juice
  • 4 teaspoons grated orange zest
  • 1 egg
  • 1 cup sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • FOR THE TOPPING:
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons honey
  • 1 teaspoon grated lemon zest

How To Make blueberry orange bread

  • Step 1
    Preheat oven to 325 F. Grease a loaf pan. Put the butter in a small bowl and pour the boiling water over. Stir until melted. Stir in orange juice and zest.
  • Step 2
    In another bowl, beat egg and sugar until light.
  • Step 3
    In a large bowl, combine all the dry ingredients. Alternately add the orange mixture and the egg mixture, beating until smooth between additions.
  • Step 4
    Fold in the blueberries. Pour the batter into the greased loaf pan. Bake for 1 hour and 10 minutes. Remove from oven, cool in pan for 5 minutes, then turn out onto a rack.
  • Step 5
    Mix together the lemon juice, honey and lemon zest. Spoon evenly over the hot loaf. Cool completely before serving or wrapping.
