We love gingerbread and the addition of the blueberries really takes it over the top. Serve warm with a dollop of whipped cream.

Ingredients

  • 2 cups a. p. flour
  • 1/2 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 3 tablespoons molasses
  • 1 cup blueberries
  • 3 tablespoons sugar
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg

How To Make blueberry molasses gingerbread

  • Step 1
    Cream butter & sugar. Add the egg and molasses - mix well.
  • Step 2
    Mix flour, ginger, cinnamon and salt and mix well. Measure out buttermilk in a measuring cup and dissolve baking soda in the buttermilk. Add buttermilk to the butter/sugar mixture.
  • Step 3
    Once mixed together, add dry ingredients and blend well. Gently fold in blueberries.
  • Step 4
    Pour the batter into a greased and floured 9 inch square pan. Sprinkle the top of the batter with the 3 tblsp. of sugar.
  • Step 5
    Bake in a 350 degree oven for 50-60 minutes. Serve warm.
