This banana bread recipe is yummy, moist and full of banana flavor! We love the addition of blueberries. They really complement the banana flavor. The streusel on top is what sets this banana bread recipe apart and makes it amazing.

Ingredients For blueberry-banana streusel bread

  • 1 c
    mashed ripe bananas (2 to 3)
  • 1 c
    fresh blueberries or frozen blueberries
  • 3/4 c
    sugar
  • 2 c
    all purpose flour + 1 tablespoon
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt (I omitted, cause I used salted butter)
  • 1/2 tsp
    ground cinnamon
  • 1/2 c
    buttermilk
  • 6 Tbsp
    butter, melted
  • 1 lg
    egg
  • STREUSEL TOPPING:
  • 1/4 c
    all-purpose flour
  • 1/4 c
    oats, regular
  • 2 Tbsp
    brown sugar
  • 2 Tbsp
    butter, cut into chunks
  • 1/4 tsp
    ground cinnamon

How To Make blueberry-banana streusel bread

    Preheat oven to 350. In a small bowl, gently mix blueberries with 1 tbsp of flour.

    In another bowl, blend remaining 2 cups of flour, sugar, baking powder, baking soda, salt, and cinnamon.

    In a large bowl, whisk mashed bananas, buttermilk, butter, and egg to blend.

    Stir flour mixture into banana mixture just until evenly moistened, the batter will be stiff.

    Gently stir in blueberry mixture. Spread evenly into a buttered 9X5 inch loaf pan.

    For streusel: In a small bowl combine 1/4 cup flour, oats, brown sugar, and softened butter. Mix with fingers till crumbly.

    Then sprinkle on top of loaf. Bake for 60-70 minutes. Let cool.
