blueberry-banana bread
Found this recipe on Food Network. It is compliments of Giada De Laurenntis. Sounded so different, but so good. I dbled my batch and add pecans to the batter. I also used frozen thawed blueberries.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs, beaten
- 2 teaspoons vanilla extract
- 2 - banana's ripe, coarsley mashed to yield 3/4 cup
- 1 cup fresh blueberries (i used frozen, drained and thawed)
How To Make blueberry-banana bread

Step 1Preheat oven to 350F. Place your oven rack in the center of your oven. Spray 6-mini loaf pans or a 9x5x3 loaf pan.

Step 2In medium bowl, combine flour baking. soda, baking powder, salt, cinnamon & nutmeg. Mix well.

Step 3In a lg mixing bowl beat, sugar, oil. eggs and vanilla till well blended. Add in bananas & blueberries. Add dry ingredients and stir just until blended.

Step 4Pour batter in to prepared pans. Bake until a toothpick comes out clean while checking the center. About 45 minutes for mini loaves and 1 hr for reg. loaf. Remove and allow to cool in pan about 1 hr. (Note- for mini pans I invert at 10 minutes and let cool on wire rack)
