This recipe is from a 1981 Southern Living Cookbook. I have been making it regularly since then. It is a family favorite. I love it with fresh cranberries instead of the blueberries; however my husband likes it with the blueberries. It tasts great still warm and topped with cream cheese.
I ALWAYS double this recipe and it makes 2 loaves that I bake together.

Ingredients

  • 1/2 c
    butter, room temperature
  • 1 c
    sugar
  • 2 large
    eggs
  • 1 c
    mashed banana (approx. 2 lg bananas)
  • 1/2 c
    uncooked oats (either old-fashioned or quick cooking)
  • 1/2 c
    pecans or walnuts, chopped
  • 1 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    blueberries or cranberries

How to Make Blueberry Banana Bread

Step-by-Step

  1. Cream shortening; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition.
  2. Stir in banana. Combine remaining ingredients, stirring gently. Add berry mixture to creamed mixture; stir just until moist.
  3. Spoon batter into greased and floured loaf-pan. Bake at 350 for 50-55 minutes.
