blueberry banana bread

This recipe is from a 1981 Southern Living Cookbook. I have been making it regularly since then. It is a family favorite. I love it with fresh cranberries instead of the blueberries; however my husband likes it with the blueberries. It tasts great still warm and topped with cream cheese. I ALWAYS double this recipe and it makes 2 loaves that I bake together.

Ingredients
- 1/2 cup butter, room temperature
- 1 cup sugar
- 2 large eggs
- 1 cup mashed banana (approx. 2 lg bananas)
- 1/2 cup uncooked oats (either old-fashioned or quick cooking)
- 1/2 cup pecans or walnuts, chopped
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup blueberries or cranberries
How To Make blueberry banana bread

Step 1Cream shortening; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition.

Step 2Stir in banana. Combine remaining ingredients, stirring gently. Add berry mixture to creamed mixture; stir just until moist.

Step 3Spoon batter into greased and floured loaf-pan. Bake at 350 for 50-55 minutes.
