blue ribbon banana nut bread

Makes 2 loaves - 24 slices
Ingredients
- 1 stick butter, softened
- 2 cups sugar or sugar substitute ( splenda )
- 6 - bananas ( ripe & mashed )
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup pecans, in pieces
- 1/2 cup walnut pieces
- 2 tablespoons vanilla extract ( mexican vanilla is best )
- 4 cups all purpose flour
- 3 - eggs
How To Make blue ribbon banana nut bread

Step 1Preheat oven to 350 degrees

Step 2Mix together butter, sugar, eggs, and mashed bananas.

Step 3In another bowl combine flour, baking soda and salt.

Step 4Combine both mixtures and add vanilla and nuts. Mix thoroughly. Pour into 2 well greased bread pans.

Step 5And bake for an hour at 350 degrees. To test stick tooth pick into center and if it comes out clean it's done.

Step 6Cooks Note: Being Diabetic I've made it with Splenda and it's outstanding.
