NOTE: USE NORMAL 1 1/2 LB SETTING ON BREAD MACHINE If needed, near the end of the kneading cycle add/use the set aside flour or water to adjust the dough for the right consistency. You can substitute unsweetened baking cocoa powder for all of the cocoa powders, the bread will not be as dark and you'll lose same flavor.

    butter, unsalted malted
  • 8 oz
    water 110 degrees -2 tbs set aside
  • 3 Tbsp
    cane sugar
  • 1+1/2 tsp
    plan salt
  • 1 Tbsp
    special dark cocoa powder
  • 1 Tbsp
    black onyx cocoa powder
  • 1 Tbsp
    unsweetened baking cocoa powder
  • 2 Tbsp
    any instant coffee
  • 2 tsp
    caraway seeds coursely grouned
  • 1 tsp
    fennel seed coursely grounded
  • 3 c
    all purpose flour -2 tbs set aside
  • 2+1/2 tsp
    active dry yeast
