Ingredients
- 1-1/4 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1-1/2 cup mashed, very ripe bananas (3 to 4 medium)
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 2-1/2 cup flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chopped nuts (optional)

Step 1In a large bowl, mix sugar and butter. Add bananas, buttermilk, eggs and vanilla, beat with electric mixer on medium speed until smooth. Stir in dry ingredients and nuts just until moistened. Pour batter into 2 greased (bottom only) 8 inch or 1 9 inch loaf pan.

Step 2Bake at 350 degree 1 hour, 5 minutes or until done. Cool 10 minutes. Remove from pan to cooling rack. Cool about 1 hour before slicing.
