best ever banana bread

I found this recipe in one of those weekly magazines found in the check-out line. I did tweak it a little to make it my own. It is awesome! Whenever I make it (it makes two) I freeze one and we eat one. It is usually gone within hours.

Ingredients

  • 1 3/4 cups all purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 sticks butter or margarine
  • 1 1/2 cups granualted sugar
  • 2 - eggs
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1 cup well mashed, overripe bananas (about 2)
  • 1/4 teaspoon banana extract (optional)
  • GLAZE:
  • 1 cup confectioners' sugar
  • 2-3 tablespoons lemon juice

How To Make best ever banana bread

  • Step 1
    Preheat oven to 350F. Grease and flour two 8 1/2 by 4 1/2 inch loaf pans. Mix flour, salt and baking soda. Cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  • Step 2
    Add flour mixture and buttermilk, alternating. Beat batter for 2-3 minutes. Add vanilla, nuts and bananas. Spoon into pans. Bake about 50 minutes til toothpick comes out clean. Cool completely.
  • Step 3
    For the glaze, stir confectioners' sugar and lemon juice together until smooth. Pour over cooled loaves. These are so delicious.
