best ever banana bread
I found this recipe in one of those weekly magazines found in the check-out line. I did tweak it a little to make it my own. It is awesome! Whenever I make it (it makes two) I freeze one and we eat one. It is usually gone within hours.

Ingredients
- 1 3/4 cups all purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 sticks butter or margarine
- 1 1/2 cups granualted sugar
- 2 - eggs
- 1/4 cup buttermilk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 1 cup well mashed, overripe bananas (about 2)
- 1/4 teaspoon banana extract (optional)
- GLAZE:
- 1 cup confectioners' sugar
- 2-3 tablespoons lemon juice

Step 1Preheat oven to 350F. Grease and flour two 8 1/2 by 4 1/2 inch loaf pans. Mix flour, salt and baking soda. Cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.

Step 2Add flour mixture and buttermilk, alternating. Beat batter for 2-3 minutes. Add vanilla, nuts and bananas. Spoon into pans. Bake about 50 minutes til toothpick comes out clean. Cool completely.

Step 3For the glaze, stir confectioners' sugar and lemon juice together until smooth. Pour over cooled loaves. These are so delicious.
