berry-walnut bread
I volunteered to make a quick bread for a snack at our garden club. Since the topic was roses, I thought there should be something rosy in the bread - so strawberries!

Ingredients
- 1/2 cup vegetable oil
- 1/2 cup plain yogurt or plain greek yogurt
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 3/4 cup sugar
- 1/2 cup chopped walnuts
- 1/2 cup oatmeal
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1 1/4 cups chopped strawberries and blueberries
How To Make berry-walnut bread

Step 1Preheat oven to 350ºF Spray a 9-by-5-inch loaf pan or 4 mini loaf pans with baking spray. Optional: line pans with parchment paper, leaving an overhang on two sides; then coat well with baking spray.

Step 2Mix together the oil, yogurt, eggs and vanilla.

Step 3In a separate bowl, whisk flour, sugar, chopped walnuts, oatmeal, baking powder, cinnamon, salt, baking soda and nutmeg.

Step 4Fold the wet ingredients into the dry ingredients.

Step 5Add berries tossed with 1 tablespoon flour to the batter.

Step 6Add the batter to prepared pan/s and bake until a toothpick inserted into the center of the loaf comes out clean about 55 to 65 minutes. About 45 minutes if making mini loaves.

Step 7Let cool 1 hour, then remove the loaf from the pan and transfer to a rack to cool completely.
