A bananna bread with all great ingredients, and very satisfying

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon baking soda
  • 1/2 cup raisins
  • 1/2 cup shredded coconut
  • 2 - eggs, lightly beaten
  • 1 cup mashed, very ripe bananas (2 med.)
  • 1/4 cup vegetable oil

    Grease an 8 x 4 x 3 inch loaf pan. Mix the flour with the sugar, baking powder, baking soda, salt, raisins, walnuts, and coconut in a large bowl. Preheat the oven to 350 degrees. Combine the eggs, mashed banana, and oil; mix until smooth. Add the liquid ingredients to the flour mixture, stirring just until the flour is moistened. Pour the batter into the prepared pan. Bake for 50 to 55 minutes or until a pick inserted in the center comes out clean. Let stand on a wire rack for 10 minutes before removing from the pan to cool completely on the rack.
