Ingredients

  • 1 stick butter
  • 1 cup sugar
  • 2 - eggs
  • 1/3 cup drained crushed pineapple
  • 1/2 cup mashed ripe banana
  • 1 1/2 cups coconut, flaked
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 2/3 cups all purpose flour

How To Make banana pineapple coconut bread

  • Step 1
    In a mixing bowl, cream butter and sugar. Beat in eggs. Stir in banana, pineapple and coconut flakes.
  • Step 2
    Combine dry ingredients; stir into creamed mixture.
  • Step 3
    Spoon into a lightly greased loaf pan (8" x 4" x 2"). Baked at 350 degree for 35 minutes or until a toothpick inserted near center comes out clean. Cool in pan 10 minutes; remove to a wire rack.
