banana nut bread

Everyone in my family loves this banana bread, the aroma of it cooking draws kids of all ages to the kitchen. I use half splenda and half sugar so my father in law can eat a little too as he has diabetes, but it is fine to use all sugar or even all splenda.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 cup chopped walnuts
  • 1/2 cup white sugar
  • 1/2 cup splenda
  • 1 stick butter softened
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 2 - eggs
  • 1 cup mashed very ripe bananas

How To Make banana nut bread

  • Step 1
    pre heat oven to 350'. spray 9x5in loaf pan with cooking spray an set aside.
  • Step 2
    combine first 6 ingredients (your dry ingredients) in medium sized mixing bowl
  • Step 3
    combine next 6 ingredients (your wet ingredients) in separate mixing bowl
  • Step 4
    mash bananas and add to wet ingredients
  • Step 5
    combine wet and dry ingredients together, but do not over mix (I just use a wire whisk as it doesn't require a lot of mixing)
  • Step 6
    pour batter into prepared loaf pan and bake for 1hr.
  • Step 7
    let cool for at least 15min. and enjoy!
