banana nut bread
I didn't realize how many of my Mom's recipes I had until I started putting them in my cookbook. This was another holiday favorite.

Ingredients
- 1/4 cup crisco shortening (melted)
- 1/2 cup sugar (plus a lttle tad)
- 1 large well beaten egg
- 2 tablespoons water
- 1-1/2 cup mashed bananas
- 1-1/2 cup sifted flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 cup chopped nuts (pecans)
How To Make banana nut bread

Step 1In a large bowl cream melted shortening & sugar; add egg and mix well. In another bowl combine water and bananas. In another bowl combine all dry ingredients.

Step 2Alternating with dry mixture and banana mixture add into the cream mixture. Mix thoroughly after each addition.

Step 3Add vanilla and nuts; pour into flour & greased loaf pans. Bake at 350 degrees for 1 hour; or less watch to make sure you don't over bake.
