A delicious quick bread. You can also use walnuts or hazelnuts instead of the macadamia nuts.

  • 1 c
    bananas, mashed
  • 1 Tbsp
  • 2 c
    all purpose flour
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
  • 1/2 tsp
  • 1/2 tsp
    baking soda
  • 2/3 c
    superfine sugar
  • 1/3 c
  • 2
  • 1 c
    macadamia nuts, coarsely chopped

How to Make Banana Macadamia Bread


  1. Preheat oven to 350°F.
  2. In a medium-size bowl, mash bananas and rum.
  3. In another medium bowl, sift flour, baking powder, salt, allspice and soda together.
  4. In a medium mixing bowl, beat sugar and butter until creamy. Add eggs one at a time, beating well after each addition.
  5. Add flour mixture a little at a time until mixed in well.
  6. Slowly add banana mixture, beating after each addition until smooth.
  7. Add nuts.
  8. Pour mixture into a greased 8 inch x 4 inch x 3 inch loaf pan. Bake about one hour, until firm and a toothpick inserted in center comes out clean.
