A delicious quick bread. You can also use walnuts or hazelnuts instead of the macadamia nuts.

Ingredients

  • 1 cup bananas, mashed
  • 1 tablespoon rum
  • 2 cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon allspice
  • 1/2 teaspoon baking soda
  • 2/3 cup superfine sugar
  • 1/3 cup butter
  • 2 - eggs
  • 1 cup macadamia nuts, coarsely chopped

How To Make banana macadamia bread

  • Step 1
    Preheat oven to 350°F.
  • Step 2
    In a medium-size bowl, mash bananas and rum.
  • Step 3
    In another medium bowl, sift flour, baking powder, salt, allspice and soda together.
  • Step 4
    In a medium mixing bowl, beat sugar and butter until creamy. Add eggs one at a time, beating well after each addition.
  • Step 5
    Add flour mixture a little at a time until mixed in well.
  • Step 6
    Slowly add banana mixture, beating after each addition until smooth.
  • Step 7
    Add nuts.
  • Step 8
    Pour mixture into a greased 8 inch x 4 inch x 3 inch loaf pan. Bake about one hour, until firm and a toothpick inserted in center comes out clean.
