Ingredients
- 1 cup bananas, mashed
- 1 tablespoon rum
- 2 cups all purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon allspice
- 1/2 teaspoon baking soda
- 2/3 cup superfine sugar
- 1/3 cup butter
- 2 - eggs
- 1 cup macadamia nuts, coarsely chopped
How To Make banana macadamia bread

Step 1Preheat oven to 350°F.

Step 2In a medium-size bowl, mash bananas and rum.

Step 3In another medium bowl, sift flour, baking powder, salt, allspice and soda together.

Step 4In a medium mixing bowl, beat sugar and butter until creamy. Add eggs one at a time, beating well after each addition.

Step 5Add flour mixture a little at a time until mixed in well.

Step 6Slowly add banana mixture, beating after each addition until smooth.

Step 7Add nuts.

Step 8Pour mixture into a greased 8 inch x 4 inch x 3 inch loaf pan. Bake about one hour, until firm and a toothpick inserted in center comes out clean.
