banana espresso bread

My parents love this bread. It's moist and rich and the espresso lends an extra little kick. Perfect with coffee or tea--some of my favorite winter mornings involve this bread, a cup of English Breakfast tea, and doing the crossword with my mom :)

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon ground coffee beans or espresso
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup sugar
  • 3 medium mashed bananas
  • 1/3 cup butter or margarine, melted
  • 3 tablespoons milk or soymilk
  • 1-1/2 teaspoon vanilla extract
  • 1 tablespoon turbinado sugar mixed with 1 teaspoon cinnamon, optional

How To Make banana espresso bread

  • Step 1
    Preheat the oven to 350 and grease a loaf pan with nonstick spray.
  • Step 2
    In a large bowl stir together flour, coffee beans, baking soda, salt. Make a well in the dry ingredients and add the egg, sugar, bananas, melted butter, soymilk and vanilla. Stir just until moistened and pour into pan. Sprinkle with cinnamon sugar mixture if desired.
  • Step 3
    Bake 55 to 65 minutes or until an inserted toothpick comes out clean. Cool for 10 minutes before removing from pan and cool completely on rack. Enjoy fresh or wrap in plastic wrap overnight for a great flavor and texture.
