I'm well known for my Banana Bread Recipe. I was traveling as a nurse and could not find it among my things. I found this recipe, which was similar to mine. It is a recipe from Mrs Hockmeyer. Mrs Hockmeyer passed away years ago, but her simple but perfect Banana Bread Recipe lives on for us to enjoy. I adapted it to what is now considered by my co-workers and friends as the Best Darn Banana Bread Recipe. I'm always being asked for it.

Ingredients

  • 3 or 4 - ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup brown sugar
  • 1 - egg, beatened
  • 1 teaspoon vanilla, generous
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups flour
  • 1/2 cup nuts, chopped if desire
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground clove

How To Make banana bread recipe

  • Step 1
    No Need for a mixer for this recipe, however, I find it easier to use a Kitchen Aid.
  • Step 2
    Pre-heat oven to 350 degrees.
  • Step 3
    With a wooden spoon, mix butter*, into the mashed bananas** in a large mixing bowl.
  • Step 4
    Mix in the brown sugar, egg, and vanilla.
  • Step 5
    Sprinkle the baking soda and salt over the mixture and mix in.
  • Step 6
    Add the flour last and mix.
  • Step 7
    Pour mixture into a buttered 4x8 inch*** loaf pan.
  • Step 8
    Mix Nutmeg, Cinnamon, Cloves together and sprinkle over top of loaves. (Can use just Pumpkin Spice)
  • Step 9
    Bake for one hour.
  • Step 10
    Cool on a rack. Remove from pan and slice to serve.
  • Step 11
    * I melt butter in the microwave for convience. ** I use four bananas. It makes bread moist. *** I use the mini-loaf pans instead, cook for 30-40 minutes.
