Ingredients
- 2 cups ripe bananas mashed (3-5)
- 1 stick softened butter
- 2 large eggs
- 1/2 cup buttermilk
- 1 cup white sugar
- 1/2 cup dark brown sugar packed
- 2 tablespoons molasses
- 1 tablespoon pure vanilla extract
- 2 1/2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup chopped pecans toasted

Step 1Preheat oven to 325, ensuring rack is in the middle of the oven. Prepare a large loaf pan by greasing with butter or non stick spray.

Step 2Measure flour, salt and soda into a medium bowl. Whisk to combine. Set aside.

Step 3Using a whisk, cream the butter in a large bowl. Add in the sugars, whisking until incorporated. Whisking, add in eggs, vanilla, molasses and buttermilk. Stir in mashed banana.

Step 4Stir dry ingredients into the wet ingredients. Stir just until thoroughly incorporated. Stir in pecans if using.

Step 5Pour into greased loaf pan. Bake in center of oven for 90 minutes. Test doneness with a toothpick inserted into center of loaf. If it remains dry, with some crumbs it is done. Let cool 20 minutes on a rack. Run a knife along sides and turn out onto cooling rack to cool to room temperature.
