banana bread

Banana Bread is a favorite of my family. I keep wanting to make french toast out of some, but I can't ever steal away some to try it with. It is always gone immediately; even when I take it to family reunions where there is a plethara of fine desserts! This is a recipe that I have had since I was young and have tweaked it over the years, and added the streusel on top.

Makes 2 loaves, or 1 bundt or angelfood pan
Ingredients
- 2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon, ground
- 1/8 teaspoon nutmeg, ground
- 1/4 teaspoon salt
- 2 - eggs, well beaten
- 1 1/2 cups bananas,ripe, mashed (5 medium sized)
- 1 cup granulated sugar
- 1/2 cup butter, butterflavored shortening, ,margarine (melted) or canola oil
- 1/2-1 cup walnuts, chopped
- 1 - recipe of streusel topping
How To Make banana bread

Step 1Grease the bottom and sides of loaf, bundt or angel food pan. Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, cinnamon, nutmeg and salt. Make a well in center of mixture and set aside. In a medium bowl combine eggs, bananas, sugar and butter. Add egg mixture all at once to floour mixture. Stir just until moistened (batter should be lumpy). Fold in the nuts. Spoon batter into prepared pan/s. Sprinkle Streusel-Nut Topping all over the top of the bread/s (optional).

Step 2Bake for 55-60 minutes OR until a wooden pick inserted into the middle comes out clean.. If necessary cover loosely with foil the last 15 minutes of baking to prevent over-browning. Cool in pan on a wire rack for 10 minutes. Remove from pan, cool on wire racks completely. Wrap and store overnight before slicing.

Step 3STREUSEL-NUT TOPPING 1/2 cup walnuts, chopped not coarse, but not too fine. 1/2 cup brown sugar, packed 1/4 cup all purpose flour 1/2 teaspoon cinnamon,ground 3 Tablespoons butter, not too soft

Step 4Blend with a pastry blender or 2 knives until crumbly (size of small peas).
