My boyfriend's grandpa is so fond of this recipe that he calls me when he sees that our local supermarket has over-ripe banana's marked down.

Ingredients
- 3-4 - bananas, smashed (the uglier, the better)
- 1/3 cup melted butter
- 1 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 pinch salt
- 1 1/2 cups all purpose flour
- TOPPING
- 1/3 cup brown sugar
- 2 tablespoons cold butter
- 1/4 cup all purpose flour
- 3/4 cup chopped walnuts or pecans
How To Make banana bread

Step 1Preheat oven to 350 degrees and butter an 8x4 loaf pan.

Step 2Mix butter and bananas in a large mixing bowl. Add in egg, sugar and vanilla then mix until well incorporated. Sprinkle baking soda and salt on top then mix in.Carefully mix flour into wet mixture being sure not to over mix. Then pour mixture into loaf pan.

Step 3For the topping combine dry ingredients and cut butter into mixture until it becomes sand-like and crumbly. Sprinkle this topping generously on top of the bread then bake for 50-60 minutes.

Step 4This is best served warm with a good, strong cup of coffee.
